Lithuanian Kibinai Pasties

Last week my sister and I payed a visit to one of the most beautiful Lithuanian cities- Vilnius. As we walked around we found a lot of amazing bakerys. In every single one we found Lithuanian snack called Kibinai. After we traveled to Trakai, another amazing city, we found out Kibinais were a famous food in Lithuania for years. But now for the recipe, for Lithuanian Mushroom Kibinai:
Ingredients:
DOUGH
(10 mini kibinai pasties)
225g ALL-PURPOSE flour (I ended up using less, but I used the leftovers to prevent the dough from sticking to the dough board)
120g of butter
1 egg + 1 egg yolk for egg wash
1,5 tablespoons sour cream
pinch of salt
STUFFING
around 20 medium mushrooms
2 mini shallots
3 cloves of garlic
salt
pepper
40g of butter
Directions:
1. Blend together egg, sour cream and salt with a wisk or a mixer. Add your butter. Make sure your butter is room temperature. Eventhough the mixture might look lumpy, it probably isn't. Use a spatula to smooth it out.
2. Gradually add your flour. Your dough should be sticky. Don't add too much flour, otherwise your kibinai will be thick and hard. I ended up not using all of my flour.
3. Wrap your dough in plastic wrap and let chill in the fridge for around 30 minutes.
4. Cut up your mushrooms, onions and garlic.
5. Melt your butter over medium heat on a pan. Add your onion and sauté for few minutes. Be careful, don't burn the butter!
6. Add your mushrooms and garlic. Reduce your heat to low. Simmer for 10 minutes.
7. After your dough has chilled and your stuffing is ready, we can begin folding the kibinais.
8. Cut your dough to 10 equal pieces. Roll each piece out on a board. You can sprinkle your previous leftover flour to prevent it from sticking.
!Before I could master the "perfect" way to create a kibinai, I watched various videos and tutorials.!
9. Put your stuffing in the center of your circle.
! Don't add too much stuffing and don't roll out your dough too thin!
10. Put your dumplings on a tray lined with parchment paper.
11. Coat your kibinais with egg yolk and bake in the oven for 30 minutes in temperature 200C = 400F
